Chef Toño's Signature Dinner in San Miguel de Allende

The crackle of fire is the first thing you hear upon entering. Doña Livier's open kitchen breathes: the coals pulse beneath a wrought-iron grill where a cut of beef rests on avocado leaves. Chef Toño greets you without an apron — hands stained with ash and a smile that says 'tonight we cook together.' Each course arrives with its own story: a mole negro that took three days to be born, a fish wrapped in hoja santa that steams as it opens, a crispy heirloom corn tortilla at first bite.

The wines — selected from Querétaro vineyards — don't accompany the meal: they complete it. At the end, a tejocote and young mezcal dessert that tastes exactly like San Miguel in winter.
